Goolar (cluster fig) ke kabab/ गूलर के कबाब




Golar popularly known as the cluster fig. Figs grow close to the tree trunk and both the tree and its fruit are called Golar in the north. It has high nutritious values, it is good for stomach pain, and eye sight.

गूलर पेड़ के तने में होने वाला एक फल है  जिसे हम अक्सर सब्जी बना कर खाते हैं, आम मार्किट में गूलर आसानी से नहीं मिल पाता है ,पर इसके पेड़ आसानी से मिल जाते हैं, कच्चे गूलर स्वाद थोड़ा सा तल्ख़ मारता हुआ सा होता है जबकि थोड़ा पकने पर इसका स्वाद सब्जी या कबाब बनाने के लिए उत्तम होता है, अधिक पका फल मीठा तो हो जाता है मगर उसमें फिर कीड़े जल्दी लग जाते है। 
इसका पेड़ बड़ा होता है और गूलर गुच्छे के रूप में इसके तने में होता है, गूलर सेहत के लिए भी काफी फायदेमंद है:-
गूलर को पीस कर यदि सूजन वाली जगह पर लगाया जाये तो आराम मिलता है।गूलर की पेस्ट को जलने की जगह लगाया जाये तो जलन में तो आराम मिलता है। पेट दर्द के लिए गूलर को उबाल कर इसमें अजवाइन और सेंधा नमक मिलाकर खाने से आराम मिलता है. आँखों के  गूलर सेहतमंद  माना गया है।

सामिग्री:-

  • १/२ किलो गूलर
  • २  बड़े चम्मच भुना  बेसन या भुने चने का पाउडर 
  • नमक स्वादानुसार
  • २ छोटे चम्मच लाल मिर्च पाउडर
  • १ बड़ा चम्मच बारीक कटी हरी मिर्च
  • २ बड़े चम्मच बारीक कटी हरी धनिया
  • १ बड़ा चम्मच बारीक कटा अदरक 
  • २ बड़े चम्मच बारीक कटी प्याज़ 
  • जीरा १ बड़ा चम्मच 
  • १/२ छोटा चम्मच गरम मसाला पाउडर 
  • १ चुटकी दालचीनी का पाउडर
  • १ चुटकी लौंग का पाउडर
  • १ बड़ा चम्मच नीबू का रस
  •  १ बड़ा चम्मच मलाई
  • १ बड़ा  टुकड़ा कोयला
  • २ लौंग 
  • १ पान का पत्ता
  • २ बड़े चम्मच घी और सेंकने के लिए 
  • चटनी परोसने के लिए

 विधि:-

  •  गूलर को धोकर  उबाल लें। 
  • हल्का गरम रहने पर ही  इसे किसी छलनी की सहयता से धोते हुए साफ़ करें तब तक साफ़ करें जब तक इसका हरा छिलका न उतर जाये। 
  • साफ़ किये हुए गूलर को मिक्सी में महीन पीस लें. 
  • कढ़ाही में घी गरम करें इसमें जीरा डालकर चटका लें, अब हरी मिर्च, अदरक और प्याज़ डालकर भून लें, अब लौंग पाउडर, दालचीनी पाउडर, नमक, लाल मिर्च और पीसा हुआ गूलर डालें मसालों के साथ अच्छी तरह से मिलाकर धीमी आंच पर ५ मिनट के लिए भूनें। 
  • अब बेसन डालें और मिश्रण को अच्छी तरह से एकसार करें, गैस बाद करें इसमें नीबू का रस, धनिया पत्ती और मलाई मिलाकर मिश्रण को एक बड़े बर्तन में निकाल लें।
  • कोयले को गैस पर गरम कर लें और इस मिश्रण में पहले पान का पत्ता उस पर कोयले को रखें उसके ऊपर लौंग रखें फिर घी डालें और जैसे ही धुआं उठने लगे ढककर ५ मिनट रखें ताकि सारी खुशबु इस मिश्रण में आ जाये।
  • अब इस मिक्सचर से कबाब बना कर तवे पर घी लगाते हुए गुलाबी होने तक सेंक कर हरी चटनी के साथ गरमागरम सर्व करें।  

Ingredients :-


  • 1/2 Kg. Gular
  • 2 Tbsp roasted gram flour or chana powder
  • Salt to taste
  • 2 Tsp red chili powder
  • 1 Tbsp chopped green chili
  • 2 Tbsp chopped coriander
  • 1 Tbsp chopped ginger
  • 2 Tbsp chopped onion
  • 1 Tbsp cumin seeds
  • 1/2 Tsp garam masala powder
  • A pinch of clove powder
  • A pinch of cinnamon powder
  • 1 Tbsp lemon juice
  • 1 Tbsp malai( top of the milk)
  • 1 piece charcoal  
  • 2 Cloves
  • 1 Betel  leaves 
  • Ghee 2 tbsp+ for shallow frying 
  • Chutney for serving 

Method:-

  • Wash and boil the Gular.
  • Wash with the help of a strainer and remove the green skin.
  • Blend to a fine paste.
  • Heat 1 tbsp ghee and add cumin, as the cumin change the color add green chili, ginger and onion and saute.
  • Add clove powder, cinnamon powder, red chili powder, salt and Gular, mix it well and fry the mixture for 5 minute.
  • Switch off the gas, take out the mixture in a large bowl and add malai, lemon juice, coriander leaves and mix it well.
  • Put the charcoal pieces on direct flame and as the charcoal heats up place it on top of the mixture, pour ghee and put the cloves, cover and rest it for 5 minute or until it absorbs the aroma.
  • Divide the mixture into equal size balls and make the kebabs.
  • Shallow fry them until golden and crisp.
  • Serve hot with green chutney.

Note:-

  • Always take semi ripe Gular.
  • Adjust the spices as per your taste.
  • You can also serve these kebabs with spiced curd.
  • You can add fresh cream or hung curd instead of malai.
