Vegetable poha

Preparation Time:- 30 minutes
Cooking Time:- 10 minutes
Serves :- 4


For soaking
2 cup poha
1tsp salt
1tbsp turmeric powder
1tbsp sugar
For poha :-
2tbsp fine chopped carrot
2tbsp green peas
2tbsp diced potatoes
1tsp chopped green chili
8 to 10 curry leaves
1tbsp fine chopped onion
2tsp mustard seeds
1tsp chana dal
Salt to taste
8 cashew nuts
1/2 cup peanuts
2tbsp sliced coconut
1 tsp Ghee


Wash the poha add salt, turmeric powder and sugar mix well and leave it for 30 minutes.
Now heat oil in a pan turn the heat on slow add mustard seeds,  chana dal as theycrackle add curry leaves green chili and onion saute till tranculant .
Add carrot  peas and potatoes mix and add salt,  pepper, mix it well.
Cover and cook .
Meanwhile add ghee in a pan fry cashew nuts , peanuts and coconut keep aside .
Open the lid add soaked poha, mix well
With vegetables cover and cook for 2-3 minutes .
Switch off the gas.
Mix nuts serve hot.
