Crispy Gatta (Taka Paisa) Masala Recipe
If you're looking for a flavorful tea-time snack with a spicy masala twist.
Although Taka Paisa is traditionally deep-fried in oil, I prefer not to fry it and instead prepare it using very little oil.
Taka Paisa is a traditional recipe from Kayastha families and makes an excellent snack to serve with evening tea or to guests.
It is prepared somewhat similarly to Rajasthani gatte, but the main difference is that onions are also added to Taka Paisa, giving it a unique flavor and texture.

Utensils Required for Making Take Paise:-
- You don't need any special equipment to prepare Take Paise. A few basic kitchen utensils are enough:
- Mixing bowl for preparing the dough
- Knife for chopping onions and green chilies
- Rolling board and rolling pin (optional)
- Deep pan or kadhai for cooking
- Spatula or ladle for stirring
- Plate or tray for keeping the prepared pieces
- Measuring spoons and cups
Ingredients:-
For Take paise:-
- Gram flour (besan) 3 cup
- 1 tsp salt
- 1 tbsp finely chopped onion
- Green chili, finely chopped
- A pinch of baking soda
- 1tsp red chilli powder
- 1 tsp amchoor powder
- 1 tbsp oil
- 1 tsp turmeric powder
- Water (for boiling)
For the Masala:-
- Oil
- 1 onion, finely chopped
- Dry spices of your choice
- Tomatoes, chopped (optional)
- Lemon juice
- Fresh coriander leaves for garnish
Method:-
Step 1:-
Prepare the Dough:-
In a large bowl, combine gram flour, salt, green chili, baking soda, oil, sliced onion, and turmeric powder. Add a little water at a time and knead into a soft, smooth dough.
Step 2:-
Shape and Boil:-
Divide the dough into equal portions and roll each portion into long cylindrical shapes.
In a large pan, bring water to a boil. Add 1 teaspoon salt and 1 teaspoon oil to the water. Carefully place the dough cylinders into the boiling water and cook for about 10 minutes.
Step 3:-
Slice the Gatta:-
Remove the boiled cylinders from the water and allow them to cool completely. Once cooled, cut them into small round slices.
Step 4:-
Prepare the Masala:-
Heat oil in a pan and sauté the chopped onion until golden. Add the dry spices and cook for 1–2 minutes. Next, add the chopped tomatoes and lemon juice. Cook the mixture until the masala thickens and the oil begins to separate.
Step 5:-
Combine and Cook:-
Add the sliced gatta (taka paisa) to the prepared masala and mix well so that the pieces are evenly coated with the spices. Cook for another 2–3 minutes, stirring gently.
Step 6:-
Garnish and Serve:-
Turn off the heat and garnish with freshly chopped coriander leaves.
Serve hot with a cup of tea and enjoy this delicious, spicy snack.
Notes:-
- You can make it healthier by adding spinach or any leafy greens to it.
- If there are any leftovers, you can cook them in a gravy and enjoy them with rice.
