The Perfect Summer Cooler
When the temperature rises, nothing beats a glass of chilled Masala Chach. This traditional Indian beverage is refreshing, hydrating, and packed with digestive spices that help keep the body cool during hot summer days. Flavored with mint, ginger, green chilies, and a fragrant tempering of cumin and asafoetida, this spicy buttermilk is both delicious and nourishing.

Tools or equipment:-
- Mixing bowl or jug – to combine all ingredients.
- Whisk / Mathani (traditional churner) – to blend the curd and water smoothly.
- Mixer grinder or blender (optional) – if you want a very smooth chaas or are using fresh herbs.
- Measuring spoons – for spices and seasonings.
- Knife and chopping board – for chopping coriander, mint, green chili, or ginger.
- Strainer (optional) – if you prefer a smooth, filtered chaas.
- Serving glasses – for serving chilled.
Ingredients:-
For the Masala Chach:-
- 2 liters buttermilk (chach)
- Salt, to taste
- 1 tbsp roasted cumin powder
- 1 tsp red chili powder
- 1 tbsp chopped mint leaves
- 1 tbsp chopped ginger
- 1 tbsp chopped green chili
- For the Tempering
- 1 tsp asafoetida (hing)
- 1 tsp cumin seeds
- ¼ tsp ghee
For Serving:-
- Ice cubes
- Fresh mint leaves
Method:-
- In a large pateela or deep bowl, add the buttermilk, salt, chopped green chilies, ginger, roasted cumin powder, red chili powder, and mint leaves.
- Whisk everything together until well combined.
- Heat ghee in a small pan. Add cumin seeds and hing. Allow the cumin seeds to crackle and release their aroma.
- Immediately pour the tempering into the prepared buttermilk and mix well.
- Place a few ice cubes in serving glasses and pour the chilled Masala Chach over them.
- Garnish with fresh mint leaves and serve immediately.
Notes:-
- If you don't have ready-made buttermilk, prepare it by whisking 1½ cups curd (yogurt) with 1 liter water until smooth.
- Red chili powder can be omitted if you prefer a milder flavor.
- For best results, chill the buttermilk before serving.
